Struggle With Fried

Zucchini Lasagna.
Make the sauce the night before- a real time saver. Using zucchini as the lasagna noodles is a great way to skinny up this yummy comfort food dish with fewer carbs. Be sure to grill or roast the zucchini as to avoid watery lasagna! This came from Skinny Taste.

Enchilada Casserole
This Cooking Light recipe has become a staple in both Kate & Heather's households. The husbands LOVE it! Heather had the brilliant idea to add black beans to the beef mixture, which not only adds protein and fiber, it's super yummy!

Time to get healthy and in shape and this is our year to do it!
We aren’t going to go for a grass and water only diet we are going to make changes to our lifestyle that will enhance and better our lives. We will be working out weekly, we will be challenging ourselves athletically by running races, learning to paddle board on the beautiful James River and much more. We will be making yummy and fun healthy meals.  We will still be enjoying cocktails and cheese fries… just not as often. We will be living and loving life.
